Why Prosphatos
Phosphatos is a gastronomic tour company, specializing in culinary and wine tours in undiscovered Greece. Born and raised in Greece, Sotiris, the owner-operator, has spent the last 30 years building relationships with local vineyards, chefs and people who are in agriculture such as olive and dairy farms. He has organized these journeys with many american chefs and wine distributors who were seeking inspiration and to learn about Greek Gastronomy. We created Prosphatos to enable people to experience Greece traveling with a knowledgeable local friend. Our journeys, which are led by local guides, include places and experiences you couldn’t find on your own or in a guidebook. In fact, many of our locations are not open to the public or tourists. Our tours are known for immersing our guests in the local lifestyle. To ensure you will have a complete personal experience, our groups are small and curated. We also offer custom tours for private groups.
Northern
Greece
Diversity should be Northern Greece’s second name the region stretches across more cultures and terrains than any other in this small country. Civilizations, including Macedonians, Ladinos (Sephardic Jews), Thracians, Romans, Byzantines, Slavs and Turks, have left traces here and this is nowhere more apparent than in Greece’s second city, Thessaloniki – a magnetic place that breathes history and character, and has the best food in the country.
Kefalonia
Island
Caves and lagoons glowing blue with the reflected sea, tombs revealing Mycenean and Roman artifacts, forested mountain villages, this largest of the seven Ionian islands has ancient winemaking traditions from the Robola grape, and extensive olive oil production. We’ll explore seaside villages, tour vineyards, dine in the local kitchens.
Crete
Island
If one is to pick the one location to be called the epicenter of the Mediterranean diet, than without any hesitation this place would be the island of Crete. Located in the middle of the eastern part of the Mediterranean Sea, this self-sustaining island has been the host of many cultures predating the Greeks themselves. It’s diverse geography, combining mountains and the sea, has allowed the growth of its own grains, livestock, greens, vegetables, grapes/wine,seafood and of course its fabulous olive oil.

About Us
Sotiris Bafitis, a true culinary journeyman, has dedicated his life to the world of hospitality and wine. Born in Washington DC and raised in a small village in Greece, he has an intimate understanding of the culinary treasures Greece has to offer. From a young age, he discovered his passion while working in a traditional Greek Kafeneio during a summer vacation. Little did he know that this experience would set the stage for an extraordinary career.
Throughout his impressive career, Sotiris worked in renowned restaurants in Washington DC. He worked at Jaleo which left a lasting impact on him. It was there that he realized his true calling lay in the food and wine industry. Sotiris collaborated with esteemed mentors to open Zaytinya, making history with a predominantly Greek wine list, a first in the US. He passionately showcased the gastronomical treasures of Greece, introducing the world to its culinary diversity.
Sotiris’ thirst for knowledge took him on a journey through the wine regions of Greece, where he gained first-hand insight into the complexity and richness of local flavors. His upbringing in Achaia, surrounded by fresh produce, exceptional olive oil, and local delicacies, instilled in him a profound love for regional flavors.
As a veteran of over 20 years in the wine/food industry, Sotiris currently serves as the national brand/sales manager for Verity Wine Partners. In his quest to expose the world to the remarkable flavors of Greece, Sotiris Bafitis stands as a shining example of dedication, expertise, and a profound love for the culinary arts.
